Chocolate Almond Butter Cookies

Yield: 11 sandwich cookies

Ingredients:

Cookies

  • 1 egg
  • ¾ cup almond butter
  • 1 tbsp organic coconut oil
  • ½ cup organic coconut palm sugar
  • 1 tsp pure vanilla extract
  • 1 cup blanched almond flour
  • 2 Tbsp organic coconut flour
  • ¼ tsp baking soda
  • pinch of sea salt

Filling

  • ½ cup chocolate chips (or preferred dairy free brand)
  • ¼ cup smooth natural almond butter
  • ¼ tsp pure vanilla extract

Directions:

  1. Preheat oven to 350° F.
  2. Line 2 baking sheets with parchment paper.
  3. In a large bowl, whisk the egg with the ¾ cup almond butter, coconut sugar, vanilla, and coconut oil.
  4. In a smaller bowl, combine the almond and coconut flour, baking soda and pinch of salt.
  5. Add dry mixture to the wet and mix.
  6. Roll dough by 1 tbsp each into balls and flatten completely to ¼" thickness, then place on the parchment lined baking sheet.
  7. Bake for 8-10 minutes.

Filing

  1. Melt chocolate chips and almond butter,
  2. Stir in vanilla.
  3. Cool.
  4. Assemble the sandwich cookies. Spoon 1-2 tsp of filling on bottom of a cookie and place another cookie as lid.
